Servings: 4Note: The candied bacon recipe is adapted from “The Gift of Southern Cooking: Recipes and Revelations From Two Great American Cooks” by Edna Lewis and Scott Peacock.Candied bacon
8 slices smoked bacon1/4 cup plus 2 tablespoons light brown sugarHeat the oven to 400 degrees. Line a rimmed baking sheet with foil, shiny side up. Dredge the bacon on both sides in the brown sugar and arrange the slices so they do not touch on the sheet. Bake until the bacon is richly caramelized, 15 to 25 minutes. Use a pair of tongs to transfer the bacon strips to a cooling rack and allow the excess fat to drain. Serve warm as candy or cool until hardened for the martinis.

Bible Belt Martini

July 3rd, 2006

The upclass Martini bar on Elm St. in Greensboro, NC is now called “CHURCHILL’s”.  It used to be called “HEMINGWAY’S” but the Ernest Hemingway estate sued the bar for trademark infringement.  The owner claimed that “Hemingway” was the name of his pet bulldog and had nothing to do with the author.

If you want a $12 Martini, a “I’m here to be seen” atmosphere, and some good people-watching from their sidewalk patio, Churchills is the place.  I had the “Bible Belt Martini”   which included Southern Comfort, triple sec, and some other things I don’t really remember.  But it was tasty, served at the perfect temperature, and was one of the cheaper martinis on the menu at $10.  Churchill’s serves absolutly no food, only drink.
